This is a difficult question, because everyone you ask has their favorite books. My go-to cookbooks are Mark Bittman's How to Cook Everything, and How to Cook Everything Vegetarian, as well as Julia Child's The Way to Cook.

As bonuses, I would also recommend Ms. Child's Mastering the Art of French Cooking, and Madhur Jaffrey's wonderful vegetarian cookbook, World of the East Vegetarian Cooking.

And no kitchen is really complete without a copy of The Joy of Cooking.
