Everyone has their own secret for making a great omelet. Mine is simple -- when beating the eggs and adding the spices, add two tablespoons of milk or water. Coat the pan thoroughly with either melted butter or cooking spray, and watch the eggs cook. When they are almost solid on the top, flip the omelet gently, trying not to tear it. Quickly put whatever filling you are using over a little less than half the omelet, and fold it. Press it down gently, and flip it again. Let it cook for about ten seconds and then get it off the heat. Use a non-stick spatula to transfer the omelet from pan to plate.
