Classic baked chicken is done by washing and cleaning the chicken, then pat dry. Cut chicken into pieces and place in an oiled baking dish. Season with salt and pepper and other spices as desired. Bake at 400 degrees for 30 minutes (this helps brown the skin) and then reduce temperature to 350 degrees and bake an additional 20-30 minutes or until meat is no longer pink and juices run clear. Chicken pieces can also be fried in a pan with canola oil first and then finish baking in the oven at 350 for 30 minutes or until done.
