Assuming your new chopping board is wood, you don't want to "seal" it with anything. What you do want to do is oil it with vegetable or canola oil very lightly, covering every surface. Repeat often, each time with a fine coating, letting it soak in before adding more oil. Once the oil has seeped into the cutting board grain, it is safe to use. You can use it, lightly wash with soap and water to clean it, but never soak in dishwater or place in dishwasher. Oil lightly often to keep the grain protected.
