Garlic contains oils that are released when it is smashed. This makes the taste stronger, this is why a garlic press will usually give you the best tasting garlic, as opposed to simply chopping the garlic up into tiny pieces. Beware when using pressed garlic, it doesn’t respond well to heat and can turn bitter very quickly, so you must work fast when cooking with garlic.
