First, be sure you have room out of doors to do this, since using the amount of oil you will need is dangerous. Second, keep a fire extinguisher handy.

You will need a 40-60 quart pot with either a basket or turkey-frying hardware. You will also need a smallish (no more than 15 lbs.) turkey.

Before you do anything else, you will want to put the turkey into the pot and fill the pot with water until the water is two inches over the top of the turkey. Measure the distance from the top of the water to the top of the pot, so that you will know how much oil to fill it with. Rinse and dry the pot, and prepare your bird by either injecting a marinade or rubbing it with a spice rub. Put oil in the pot to the level you noted, then heat it for about 20-30 minutes until it's between 325°F & 350°F.

Using your basket or turkey hanger, lower the turkey carefully into the oil. It should cook for about 3 minutes per pound. Check the temperature of the finished turkey, which should reach 170° F. in the breast and 180° F. in the thigh.

After cooking, make sure you let the oil cool completely before disposing or storing.
