Some apples are tart, but these are just sour- how does that happen?

Granny Smith Apples are sour by nature, but if left on the tree to blush they will become sweeter in taste as well. A Granny Smith will never be a sweet apple, but the acidity that cause s the sour taste will diminish the longer it is on the tree.
